- ¼ cup olive oil
- ½ large onion chopped
- 3 garlic cloves minced
- ½ cup orzo pasta
- 1 cup long grain white rice
- 1½ cup chicken broth
- ¾ tsp salt
- ¼ tsp coriander
- ¼ tsp garlic powder
- ¼ tsp ground black pepper
- ¼ tsp onion powder
- ¼ tsp paprika
- 1 tsp dried parsley
Instructions
- Use the Sauté function to heat the oil. Add the onions and garlic and sauté for 1-2 minutes.
- Add the orzo and stir to coat with oil, cook for 2-3 minutes.
- Add the rice and cook for another 3-4 minutes, or until the grains turn bright white.
- Add the broth, salt, coriander, garlic powder, pepper, onion powder, and paprika. Stir to combine.
- Close and lock the lid. Pressure cook on HIGH for 3 minutes.
- Once the cooking time is done, turn the cooker off to naturally release pressure. This will take anywhere from 10-15 minutes.
- Carefully open the lid and add the parsley, stir well and let the rice sit for a few minutes before serving.
